Foraging for wild mushrooms is quickly becoming a hobby for many Americans. A weekend in the woods breathing fresh air is always made brighter by finding a beautiful edible mushroom. However, these mushrooms shouldn’t be eaten right after being picked; it’s important to clean and dry wild mushrooms to ensure potency and quality.

Types of Wild Mushrooms That Can Be Foraged

There are many mushrooms to forage across the U.S. It would be difficult to list all the mushrooms, so below is a list of some more popular mushrooms that enthusiasts enjoy foraging for across America. Be sure to properly identify mushrooms before harvesting. There are several poisonous mushrooms that look like some of the ones listed below.

Cleaning Wild Mushrooms

Never put dirty mushrooms into a foraging basket or container. Dirt can stick in the gills or other areas of perfectly good mushrooms ruining the taste or experience. Cleaning a mushroom only takes a few seconds to a minute and is always appreciated.

After picking the mushroom, cut the bottom off to remove any dirt attached. Then, turn the mushroom upside down and tap the stem to knock any dirt off of the top of the mushroom. Lightly brushing or blowing across the top can release any final particles. As a final step, some mushrooms may have dirt or other debris embedded into the stem. For these mushrooms, take a knife and gently scrape it down the stem to remove the top layer of skin. This usually removes any unwanted dirt.

Do not use water to clean mushrooms. This can cause quality issues during the dehydration process. If too much water is absorbed it can also damage the mushroom and shorten the shelf life. Only use water lightly right before cooking fresh mushrooms. Do not clean them with water if they are going to be dehydrated.

How to Dry Wild Mushrooms

Many prefer to use a dehydrator for speed. Some enthusiasts have started the dehydration process by air drying or sun drying their mushrooms. It is reported that this speeds up the dehydration process and creates a more flavorful and potent experience.

Dehydrator

  1. Slice the Mushrooms: For larger species, start by slicing the mushrooms into pieces about a half-inch thick. These thinner pieces dehydrate faster and thicker ones will be very tough when eaten or rehydrated.
  2. Place in Dehydrator: When placing the mushrooms into the dehydrator make sure to separate them. Every mushroom needs adequate room to breathe and release moisture. If they are placed too close together, there is the possibility of inconsistent dehydration, which can lead to mold.
  3. Drying Temperature and Length: The ideal temperature to dry wild mushrooms is 135F – 150F. The entire dry time can be anywhere from eight to forty-eight hours depending on the mushroom that is being dried. Overdrying can occur and affect the quality and flavor of the mushroom, so checking on the mushrooms every hour or so is a good idea. A mushroom dehydrated properly will be cracker dry and slightly brittle.

Storing Wild Mushrooms

Once the wild mushrooms are clean and dried, place them into a glass or plastic air-tight container. Store this container out of direct sunlight in a cool, dry place. If stored properly, dried mushrooms will be good for years. They can be eaten dried or rehydrated with water before being used in cooking.
